We have talked about Adobo and Fried Rice individually plenty of times already, but today we are to talk about about the two together and spoiler alert, it is delicious! Anyway, going back to our Adobo Fried Rice… this one is what we have for you today and we honestly have been looking forward to share this with you guys because we just downright love talking about our food adventures – both inside and outside of our humble yet very busy kitchen. You guys know how our love for food knows no bounds hence we see to it that we don’t waste any so we always try our best to razzle and dazzle our leftovers; which how our Adobo Fried Rice actually came about.
Believe it or not, we do not always have a huge appetite that could devour everything so yes, we do have leftovers from time to time. Fried Rice is probably a go-to for many Filipino households when they have last night’s cold rice; and as much as Fried Rice is delicious as it is, we can’t help but combine it with the Adobo we also have in our fridge – thus the birth of our Adobo Fried Rice. But wait, of course you can cook a new batch of Adobo if you don’t have leftovers of it like us because that’s what we do sometimes too.

Truly, the tasty combination of Adobo and Fried Rice is a such a flavorful wake-upper that we are very much willing o wake up earlier than we usually do just to be able to dig into a bowl of this or two. On top of that, Adobo Fried Rice hits that hearty and homey breakfast we are talking about, all thanks to the tender and tasty meat plus the delicious and filling fried rice. If we are even feeling a little bit extra, we also pair this dish with some eggs from time to time.
Slice garlic, onion, tomatoes, and onion leeks. Set aside.
Cook adobo or reheat leftover adobo if available.
Slice pork adobo into bite-sized pieces. Set aside.
Saute garlic, onion, tomatoes, and pork adobo.
Add ground black pepper and salt. Mix.
Add cooked rice. Mix again.
Add adobo sauce. Mix again.
Push the Adobo Fried Rice to one side of the pan, then make scrambled eggs on the other side.
Once scrambled eggs is cooked, mix it well with the Adobo Fried Rice.
Top it off with onion leeks.
Transfer Adobo Fried Rice into a plate.
If possible or preferred, add more tomatoes, pork adobo, and red egg for sides. Serve and enjoy!
