Aplaya Restaurant & Bar: A paradise inside Bluewater Panglao serving contemporary Filipino cuisine

Being able to stay in Bohol for quite a few days was wonderful and being able to stay with two amazing resorts was really something we are so grateful for. Arriving at Bluewater Panglao – which was the second resort we got to stay in before our flight back to Manila – just right in time for lunch was really heaven sent, because their Aplaya Restaurant & Bar is undeniably a paradise itself. The restaurant has a pool beside it plus it is also near the sea, so you really get to enjoy the picturesque view of both the water and the sky all the while indulging in a feast of contemporary Filipino dishes.

The view here at Aplaya Restaurant & Bar is the only thing that would have your jaws dropping, because their food offering is surely drool-worthy, too! Going for not only Filipino cuisine, but playing it up into Contemporary Filipino cuisine is something that Bluewater Panglao really is proud of – and they really should, because we love each and every dish they served on our table. That being said, enough chit-chat and join us as we get our taste buds pleasured by all the yummy nomnoms we got to try here at Aplaya Restaurant & Bar of Bluewater Panglao.

As the view is as refreshing as it can be, we also opted to start with a refreshing dish, and that is none other than their Bluewater Chicken Salad (Php 440). This one is like a plate of a tower-like serving of grilled chicken breast layered with assorted lettuce, peppers, green beans, mango, carrots, shallots, spring onions, and cashew nuts in balsamic dressing with sweet and sour sauce!

Following that with fresh yummies from the waters, we got a taste of their Sinugba Nukos (Squid) (Php 675) which is a bestseller and is also available in chicken (Php 540) and in pork belly (Php 540). This Visayan-grilled delicacy is cooked with onion and tomato salsa,  and is served with steamed rice, and native sauce.

Another yummy treasure from the water is their dish called Tinolang Pugapo (Php 650). This one is a hearty bowl of native soup with grouper slices flavored with ginger, lemongrass, and onion served with chayote, malunggay leaves, and tomatoes.

Next to that is a classic Boholano dish that tourists really should be able to get a taste of when in Bohol – and that is none other than Halang-Halang. Aplaya Restaurant & Bar’s version is called Hinalang na Manok (Php 400). As mentioned, this one is a Bohol specialty that is of chicken cooked in onion, ginger, peppercorn, chili, and coconut milk!

With a bunch of savories we dug into, of course, we paired that with every Pinoy’s life source – rice! Their Adobo Rice (Php 570) is of fried rice with chicken adobo flakes and sauce, topped with adobong Bisaya, gorgeously served in a bamboo.

Aplaya Restaurant & Bar topped off our savory lunch journey with them by letting us enjoy more of their Crispy Pata which actually was a monthly food highlight of theirs! Every month, Aplaya Restaurant & Bar has this certain dish that they put the spotlight on and guests should not miss out on.

And of course, for dessert, visiting tourists as well as locals should be able to get a sweet kiss from this local ube Bohol is known about and is proud of – Ube Kinamapay. Aplaya Restaurant & Bar has taken it into their hands to make something grand out of this Boholano specialty and one of which is their Bohol Ube Kinampay (Php 183) which is a sandwich of coconut macaroons with halayang ube (purple yam), using Bohol’s special ube kinampay and cream with sago. This one is even served with ube ice cream for an extra ubelicious experience!

Lastly, for their drinks, Aplaya Restaurant & Bar is currently amping up their menu, so we got to have first dibs on a few of what they are going to launch some time next year – their Pina Colada Smoothie, which is of pineapple and coconut milk; their Pina Colada Smoothie, which is of banana, mango, and peach; as well as their Tropical Summer Fruits Smoothies which is a fave as this one is of mango, strawberry, pineapple, and watermelon. These fruity smoothies are such great sippies while enjoying the pristine waters that is almost like a picture-prefect moment.
