Beef Caldereta is one of our absolutely top favorite Filipino dishes out there! We love every little thing about this dish – the oh-so-tender and delicious beef, the lovely variance of vegetables it has, and the thick tomato based sauce that has a kick to it; it’s hands down yum in all forms! Truly, from the bottom of our hearts, we love Beef Caldereta.

That said, if you still don’t get it – today, we will be sharing with you how we do our Beef Caldereta! Hooray! Caldereta actually is one of the many Filipino dishes that was influenced back when the Philippines was a colony of Spain. Besides that, as much as Beef Caldereta is widely cooked nowadays, traditionally, the protein used in making Caldereta is actually goat meat; but since goat meat is not that accessible to many plus sometimes pricier, Filipinos found alternatives instead. Now, Caldereta can be cooked with pork, chicken, and our favorite, beef!

Focusing on Beef Caldereta, this one is our favorite, because we feel like we are having some kind of a special occasion when eating it even though it’s just a regular day. Beef Caldereta just has that certain element to it that is why it is also often served during parties or get-togethers. It is also a great dish to have with friends and family as its sauce is already something you could pair with rice and feel satisfied after. Indeed, Beef Caldereta will always take the spotlight in any table!
Since we are making Beef Caldereta, it is expected that cooking it would take us some time. Beef, after all, is a protein that needs to be tenderized so as to be more enjoyable in a dish – or we prefer it like that. As that is the case, you can actually boil it for some time or use a pressure cooker to shorten the tenderizing time. Either way, you surely will end up with tender beef cuts that would make eating your Beef Caldereta a luscious and delightful experience!

Alongside with beef, as we have mentioned, it has vegetables too such as potatoes, carrots, bell peppers, and sometimes, green peas as well. For its sauce, this one is mainly made with tomato sauce and liver spread. Liver spread is used in order to achieve that trademark thick Caldereta sauce that everyone loves! Others also add cheese into the mix so as to make their Caldereta even more flavorful!

There really are so many reasons to love Beef Caldereta, hence our deep adoration for it will always be evident when there is one in front of us. Tenderize the beef first. To do this, place the beef inside a pressure cooker, together with garlic, pepper corns, salt, and water. Bring it to a boil and make sure to skim off the scum, then let the beef tenderize more for a while.
Start slicing the garlic cloves, onions, bell peppers, carrots, and potatoes. Set them aside.
Remove the beef from the pressure cooker and then set aside the beef stock. Set them both aside separately.
Sear the potatoes, carrots, and bell peppers respectively, and then set them aside separately as well.
Saute garlic and onions in a pan. Add the beef, salt, ground black pepper, oyster sauce, water, tomato paste, and tomato sauce into the same pan. Mix them altogether.
Add the beef stock into the pan and then let it simmer for a while.
Add liver spread, green peas, potatoes, and carrots. Mix them altogether and then let it simmer again for a while.
Add grated cheese, then mix it again; and then add bell peppers and for the last time, mix it well altogether.
Serve the Beef Caldereta. Enjoy!
