Goto is such a trusted dish here in the Philippines. Often seen as a food for the sick because of its all-in-one characteristic plus soft texture, Goto surely has seen and helped sick people get better.

If you are not familiar with what Goto is, then let us tell you—this dish is actually rice porridge that usually has chicken and egg in it for protein. Although, for today we are ditching the chicken and instead switching it up with beef. That’s right, Beef Goto is what we have for you today, and we know that has you drooling already.

Luscious and scrumptious—that’s how our Beef Goto is because we actually used beef tripe for this recipe. Beef Tripe contains a lot of fat and has a flavor that is liver-like since it is actually a cut of meat that comes from a cow’s stomach lining. If you have not had beef tripe before, knowing what it is can be intimidating, but trust us, this meat cut does wonders to the whole dish plus, when cooked right, this has a lovely soft texture to it. Other than beef tripe, we made sure to load our Beef Goto with eggs to make it even more filling than it already is since the glutinous rice is actually heavy on the stomach already. Meanwhile, to make it flavorful and aromatic, we also put spices and lemongrass.

With that, do take note that making this dish can be tedious because allotting time for the beef tripe to tenderize is a must, but everything is just so worth it at the end, especially you got that lovely soft bite, so don’t let that part get to you because as always, we have you back. In a pot, put pre-cleaned beef trip, then add ginger, peppercorn, lemongrass, and water.
Boil over medium heat for 3 to 4 hours or until tender.
Chop garlic, onion, and spring onion; then slice ginger and beef tripe. Set aside.
Wash glutinous rice twice.
In a pot, saute ginger, garlic, onion, and beef tripe.
Add washed glutinous rice. Saute.
Add water. Bring to a boil, then lower heat. Continue to cook for 25 to 30 minutes.
Once rice is cooked, add fish sauce, then season with salt and pepper.
Add kasubha. Mix.
This is optional, but add beef cube to add more flavor. Mix until beef cube dissolves, then let it simmer for a bit.
Top with green onion for more flavor and for garnish.
Transfer Beef Goto to a serving bowl.
Again, this is optional, but boiled eggs, fried garlic, calamansi, and even more green onion can be topped onto Beef Goto.
