Beef Pochero Recipe

There really are a lot of Spanish influences in the Philippine culture. Many Filipino dishes are actually of Spanish roots; one is the Puchero which, as we have discussed in our Chicken Pochero as well as Beef Shank Pochero with Bone Marrow Recipes, means stewpot or earthenware pot. Undeniably, being colonized by a foreign country has a lot of impact, and food is no exception. From Puchero, the term is now more used as Pochero which is a Filipino stew that is said to be similar with Beef Nilaga. The main difference being their broth or soup.

Made mainly with meat which can be of chicken, pork, beef, or even a mix of those three, alongside some beans, vegetables, and its signature plantains, Pochero is one of those Filipino dishes that are commonly served in gatherings or celebrations. The unique sour blend that comes from its soup made from tomatoes, complimented by the freshness of vegetables and the sweetness of plantains or saba banana are the reasons why Filipinos love having this, particularly during special occasions.

With that, we wanted to treat ourselves with something really special as we feel like we deserve to give ourselves some credit for a job well done. We have been doing our best amidst everything that is happening day in day out, after all. Hence we decided to have Pochero. We already made one with Chicken and another with Beef Shanks alongside Bone Marrow. We didn’t feel like having Chicken again so we opted for Beef this time. Not beef shanks with bone marrow though because we were not able to get those specifically; so for today, we are having straight up Beef Pochero itself.

Beef Pochero is one enticing dish and as much as we don’t condone being colonized, we are acknowledging the fact that we now get to cook Beef Pochero and enjoy its delightful taste because of Spanish influence.

Now, as we are to cook Beef Pochero, we all know cooking beef can be tricky for a lot of people, including us. There are times that we end up with perfect tender meat, but there are also times wherein we end up with something we know we could do better at. That said, if you are not that familiar with beef or any meat for that matter, it is best for you to ask your local butcher which one needs to be cooked longer and which one can be cooked for a short period of time and still end up with something tender. On a side note though, good thing pressure cooker has been invented so now we could cut the time of tenderizing meat in half or even more!

Anyway, you need not to stress yourself about all that because we are here to show you how we made our Beef Pochero oh-so-enjoyable! Our Beef Pochero is not only delicious, but also we were able to make the beef itself oh-so-tender that chewing it doesn’t feel like work which is our goal since as we have said, we are celebrating; so calm down and start following our recipe so you could enjoy your own Beef Pochero too!

Ingredients:
 1 kg beef
 2 potatoes
 2 tomatoes
 1 onion
 5 garlic cloves
 ½ cabbage
 ½ bundle of chinese pechay
 4 saba bananas
 ¼ kg Baguio beans
  tbsp salt
 ½ tsp pepper
 1 ½ tbsp sugar
 1 ½ tbsp tomato paste
 1 tbsp fish sauce
 390 g pork and beans
 250 g tomato sauce
 3 chorizo
 1 liter beef stock

Directions:
1

Place beef in a pressure cooker or a pot, then add pepper corns and water.

Bring to a boil; then remove scum once it boils.

Pressure cook the beef or tenderize the beef in a pot for 40 to 50 minutes.

Slice garlic, onions, tomatoes, Baguio beans, cabbage, saba bananas, potatoes, and chorizo. Set them aside.

Remove meat from pressure cooker or pot once beef is tender. Set aside beef stock.

In a pan, sear saba bananas. Set aside after.

Next is sear potatoes. Set aside.

Saute garlic, onion, chorizo, tomatoes, and beef.

Add tomato paste and tomato sauce. Mix.

Add beef stock. Mix again.

Cover with a lid and let it simmer for a while.

After letting it simmer, add potatoes. Mix for a bit.

Cover with a lid and let it simmer again for a while.

Add saba bananas. Mix again.

Cover with a lid and let it simmer again for a bit.

Add pork and beans. Garbanzos can also be used. Mix.

Add fish sauce and ground black pepper. Mix.

Add salt. Mix.

Add brown sugar. Mix.

Add cabbage, chinese pechay, and Baguio beans. Simmer for a while.

Transfer Beef Pochero to a serving dish. Serve and enjoy!
