Pochero is a Filipino stew commonly made with pork, plantains, beans, and vegetables. In some cases, chicken and beef can also be an alternative protein. Regardless, you surely will end up digging into your plate and reaching for the rice more when you have Pochero right in front of you. Pochero actually has a lot of versions around the globe, but Spain is said to be its origin. The Spanish word “Puchero” originally meant earthenware pot until it the word was extended to mean any vessel, and then the dish cooked in it – which we believe is the Pochero that we know now. After all, it is not a secret that the Philippines was under the Spanish regime for more than three centuries, so certainly, the Philippine culture has been heavily influenced by the Spanish culture.

Anyway, as we have said, the Pochero that we know now is often composed of pork, chicken, or beef stewed with plantains or saging na saba. Aside from those, this dish may also include potatoes, chorizo, and greens such as leeks, chickpeas, cabbage, or bok choy in a tasty tomato sauce. That said, we decided to play with Pochero more and thought of a way how to make this already yummy dish even yummier – and that’s when we thought of making Beef Shank Pochero with Bone Marrow.

Ingredients:
 1 kg beef
 2 bone marrows
 2 potatoes, sliced
 1 carrot, sliced
 4 saba banana, sliced
 ¼ kg cabbage, sliced
 ¼ kg green beans, sliced
 ¼ kg chinese cabbage
 1 onion, minced
 4 cloves of garlic, minced
 1 sweet corn, sliced
 250 g tomato sauce
 390 g pork and beans
 ½ tbsp salt
 ½ tsp ground black pepper
 1 tbsp brown sugar
 3 cups beef broth

Directions:

Sear saba bananas, potatoes and carrots.

Saute' garlic and onion. Then, add pre-boiled beef shanks.

Add tomato sauce and beef stock. Bring it to a boil.

Add corn, ground black pepper, salt, potatoes and carrots.

Add pork and beans, saba bananas and let it simmer for 10-15 minutes.

Add cabbage, Chinese cabbage and green beans. Let it simmer for another 10-15 minutes or until the vegetables are slightly cooked.

Add pre-cooked bone marrow in the mix. Let it simmer for another 5-10 minutes or untill vegetables are cooked.

Serve hot in a bowl and enjoy!
