Chicken Adobo Recipe

No one told us to make this today (other than our hearts and our palates) but here we are anyway! If you guys have had it with Adobo then consider us not listening because we have another Adobo recipe for you, plus we are never going to get tired of making and of course, eating Adobo!

We know we have given you so many Adobo recipes already such as Pork Adobo, Adobong Pusit, and even Chicken Adobo sa Gata, but then we realized we have not even given you one of the classic Adobo recipes yet—Chicken Adobo itself. As mentioned, we have made one with Gata but we can’t believe we haven’t made one without it so here we are putting out a solution for that.

Chicken Adobo

Chicken Adobo is definitely one of the classics that we have grown up with. Elders at our childhood home used to make this for us and they will sure earn a smile from us instantly because we absolutely loved this dish growing up! Who are we kidding—we love this dish even until now!

Made with braised chicken, mostly thighs and drumsticks, in a sauce that is a mixture of vinegar, soy sauce, garlic, and peppercorn, Chicken Adobo is definitely packed with flavor! Every mouthful of this dish is a delicious blend of tangy, salty, garlicky, and even sweet and spicy tones all thanks to the condiments and seasonings that make up a Chicken Adobo. On top of that, as we make sure to have the chicken slowly simmered in the sauce, we do end up with something that is rich and enjoyably tender. Yum, indeed!

And so, if you have been missing some homey Chicken Adobo, then why don’t you try following our recipe and delight in it in no time? You are not going to regret it, you can hold us to that!

Ingredients:
 1 kg chicken legs and thighs
 1 onion
 1 garlic head
 4 laurel
 ½ tsp salt
 ½ tbsp peppercorn
 ½ cup vinegar
 5 tbsp soy sauce
 2 tbsp oyster sauce
 1 cup water

Directions:

Slice garlic and onion. Set them aside.

Place chicken in a pan, then add laurel leaves, garlic, onion, peppercorn, salt, soy sauce, vinegar, and oyster sauce.

Cover it with a lid and bring it to a boil.

After a while, add water. Make sure the chicken is being cooked evenly.

Cover again with a lid and let it simmer until chicken is tender.

Separate chicken from the sauce.

Preheat some oil in a new pan.

Pan-fry the chicken.

Remove the chicken from the pan after pan-frying it.

Add the sauce back in the pan. Heat and stir it for a few seconds.

Add the chicken onto it and let it sit there for a while.

Transfer Chicken Adobo into a serving a dish. Serve and enjoy!
