Ready for an adventure today? You better be because we got one just sitting in our kitchen at this very moment ready to be explored! Bicol Express is what we have for you today but it isn’t the usual one with pork for protein, because today’s Bicol Express is actually Chicken Bicol Express.


Bicol Express is a popular Filipino stew consisting of, as we have said, usually pork sliced into bite-sized pieces, together with vegetables, and then made flavorful with coconut milk, shrimp paste, and chilies. Indeed, Bicol Express is known for its spicy kick which is such a lovely touch to its coconut-y tones.


As we have been digging into dishes that are being starred by pork lately, we decided to play with the classic Bicol Express and use chicken as its protein, hence our Chicken Bicol Express. We made ours even more hearty by putting sliced sigarilyas and sitaw into it which added some freshness and lovely crunch that contrasted and somehow blended well to the tenderness and yumminess of chicken.

Besides that, what we love about Chicken Bicol Express is that the all the flavors of the coconut milk, the shrimp paste, and the spices that we used seeped right into the chicken which makes every bite tasty. Of course, as our Chicken Bicol Express is abundant in flavors, pairing it with steamed white rice is an automatic feat that is mouthwatering and absolutely satisfying.

Saute' garlic, ginger, onion and tomatoes. Then, add chicken and mix.
Add shrimp paste, ground black pepper, salt and coconut milk. Let it simmer for 5 - 7minutes.
Add winged beans, string beans and coconut milk. Let it simmer for another 4- 5 minutes.
Add the red and green chillis and mix well. Serve hot and enjoy!
