We have been craving for some adventure lately but with everything that is still happening, we just could not drop everything that is in our plate and take off, so here we are satisfying our thirst for adventure in our own kitchen instead. Yes, that’s right – the dish we have for you today is something which has that delectable curry kick we have always been a fan of and we know you guys love too!

Spice is something that others may be intimidated with, but it is a total yay for us! That’s why, today we are cooking something that is indeed packed with big flavors. Chicken Curry is one of our comfort food. In fact, it is an all-time favorite because other than it is easy to cook, it is also very much rich, creamy, tasty, and goes really well with steamed white rice. So yes, we are hands down in love with Chicken Curry!

Other than it can be conveniently cooked in a pan, the splendid mix of tender chicken plus lovely array of potatoes, carrots, and bell peppers all in a thick and oh-so-delicious curry sauce is definitely the reason why we are fans of this dish! On top of those, Chicken Curry is actually a dish that is part of our meal rotation at home as it could feed all our hungry tummies in one go. Perfect for a large crowd or even a tiny one but with huge appetite, so to say!

That said, our Chicken Curry is actually a Filipino translation of the traditional Chicken Curry. Philippines after all has been a home to migrants, traders, and even colonizers of different races from different cultures – that’s why many Filipino food, one of which is Chicken Curry, can actually be traced back from and also present in different countries. With that, our Chicken Curry has that delightful punch to it because of the curry spices but also it has that signature sweet note from coconut milk.

Slice potatoes and then sear them. Set aside.
Slice carrots and then sear them. Set aside.
Slice red and green bell peppers and then sear them. Set them aside.
Sear chicken for 3 to 5 minutes per side. Set them aside.
Saute ginger, garlic, and onion.
Add the chicken and toss them altogether in the pan.
Add laurel leaves. Keep tossing.
Add curry powder. salt, and pepper. Mix.
Add water and then bring to a boil.
Add potatoes and carrots. Let it simmer for a while and then mix.
Add chilis and coconut milk. Let it simmer for 20 to 25 minutes or until chicken is cooked.
