‘Tis the season to be jolly! Yes, the holiday season has been running for almost three months now, because here in the Philippines, when the September 1st comes, that means the holiday season has come too. Filipinos really are big when it comes to Christmas. Radios will be filled with Christmas songs, houses will be adorned with twinkling colorful lights during the night, families will start to put up their Christmas trees, and people start to write their wishlist.
Truly, a lot happens during Christmas season and that includes food preparation. Planning for Noche Buena probably takes as much as time as actually making it. Everyone has their own favorites that they want to be able to dig into during the celebration of their favorite holiday, so everyone is really trying their best to have what they want part of the Noche Buena table. Staples such as Lechon, Pinoy-style Spaghetti, Pancit, and Lumpiang Shanghai are some go-to Christmas food. Meanwhile, for something sweet, Pinoys often have Bibingka, Puto Bumbong, and of course, Leche Flan.

Leche Flan, also known as Crème Caramel, is a popular dessert that is often served during Filipino gatherings. It was said that Filipinos learned about this delicacy during the time when Philippines was a colony of Spain for years. The word “Leche” meaning “Milk” in Spanish is in its name as Leche Flan is made up of milk, egg, and sugar.
After either being baked in an oven or steamed on a stovetop in oval tin pans which Filipinos call llaneras, the flan is then refrigerated to chill and set altogether. This could be eaten as is — if people just could not help themselves — or this also can be served by inverting the llanera on a platter, making the caramel sauce bottom be the top.

Leche Flan is indeed one of the highlights during Noche Buena, because this one is such a sweet, creamy, and silky journey that families just enjoy having together. Besides being a dessert for Holiday season, Leche Flan is also commonly used as topping for another famous Pinoy dessert, the Halo-Halo, or even on Graham De Leche. 1. Separate yolk from egg white and place in a bowl.
2. Add Alaska Evaporated Milk. Followed by Alaska Condensed Milk. Mix everything thorougly.
3. Add vanilla extract and then mix. Strain the mixture 2-3 times.
4. Melt granulated sugar. Pour caramel into a container or llanera then add the mixture.
5. Cover with Alumimum Foil and then steam for 20-25 minutes on low heat.
6. Chill for at least 4 hours and then serve!
