A great example of that is Ube Halaya. It is a well-known and well-loved Philippine dessert made from boiled and mashed purple yam! This sweet treat can be delighted in as it is, but it also can be used as a spread or even in making a variance of purple yam based sweet treats, pastries or even ice cream.

Here is how you could make a lipsmacking good Ube Halaya:

Ingredients:
 1 and 1/2 kg of purple yam
 2 cups of coconut milk
 2 cans of evaporated milk
 1 can of condensed milk
 1 and 1/2 cups of sugar
 50 g cheese
 100 g butter
 ½ tbsp of vanilla
 1 tsp of ube extract

Directions:

Cut the purple yam into pieces and boil. Let it boil for 30 minutes or until it's tender.

Peel all the purple yam's skin then grate it in a bowl.

On a cooking pan, add coconut milk and brown sugar and then boil.

Add vanilla extract and evaporated milk. Then, add the grated purple yam and mix it all.

Add ube extract, grated cheese and condensed milk and then mix.

Add butter to the mix. Then, stir continuously for 30 to 45 minutes.

Serve into a jar or bowl and enjoy!
