Oh, how we love food with a bit of kick to it! Seriously, we enjoy having that dash of spice in our food, because it makes it even yummier for us. A little bit of spice has not hurt anyone anyway, so we sure are fans of spicy food.
That being said, as we are no doubt a fan of classics too, we do adore classics with that extra punch as well; and that’s where Caldereta comes into our lives.
The traditional Caldereta dish is of a goat meat stew simmered in spicy tomato sauce. However, using beef as its protein is another popular version many Filipinos enjoy having. Other than meat, Caldereta also includes a chock-full of vegetables, specifically potatoes, carrots, bell peppers, green olives, and hot peppers. Indeed, Caldereta is hearty and delicious which is great for family get-togethers and even special occassions.
As mentioned, Caldereta is usually of goat or beef, but just like many Filipino dishes, a variance of meat can also be used in making this dish such as chicken and pork. However, as we love trying out different things, we opted to use something that is readily available in our pantry — Corned Beef.

Corned Beef is one of our many go-to food choices for when we need and want something tasty and convenient at the same time. This food brings so much flavor and satisfaction to our meal times, so we decided to turn it into something more extra which is Caldereta.

With that, our Corned Beef Caldereta is a combination of two of our favorite household dishes and we are so excited and happy to share it with you guys, especially as we used Delimondo for this! Start with cooking potatoes until it's slightly brown. Do the same with carrots, red bell pepper and green bell pepper.
Saute' garlic and onion. Then, add the potatoes and carrots followed by the Delimondo Caldereta Corned Beef.
Add pepper and salt to the mix. Let it simmer for a few minutes and then add the green and red bell pepper.
Add grated cheese and then mix. Serve hot into a bowl and enjoy!
