It’s not a secret that on our Cebu trip, we got to stay at two hotels, one of which is the 5-star hotel, Crimson Resort & Spa at Mactan. There, we were able to make memorable memories at our Poolside Villa that surely gave us an uplifting and relaxing experience.

Anyway, Crimson Resort & Spa actually has two breakfast options depending on where the guests are staying. For Villa guests, they get to dine at the prestigious Enye by Chele Gonzales. This one is undeniably oozing with elegance and comfort that is such a wonder!

That being said, for our second day here at Crimson Resort & Spa, we get to wake up and enjoy the gorgeous and more upscale breakfast spread of the gorgeous Enye by Chele Gonzales. Entering, the first to greet you a good morning is their station that highlights their pastries. That’s right, you get to carb it up first and foremost. Here, you get a lot of baked goodies like doughnuts, banana bread, pudding, churros, and a whole lot.

Following that is their Salad station which, of course, you get to make your own. They have a variance of greens ready for your taking alongside different dressings and toppings to make your salad not only appetizing, but definitely tasty as well! You can also top it off with some fresh fruits as those are not far away from their salad bar.

Along that line of delectables you will get a sight of their cereals which kids and kids at heart would truly delight in. Besides that, you could also grab a plate of bacons, hash browns, waffles, and pancakes which you can adorn with delectable toppings like sprinkles, mini mallows, honey, among others.

As you get closer to your table, you will be catching a glimpse of their bar which your feet will no doubt bring you to. Here you will be able to have some plain yogurt, muesli, flavoured yogurt alongside some redy-made smoothies. It’s your call to make your own combo of smoothies, too!

And of course, being you are already at their bar, here you would be able to grab your choice of bev as well like fresh pineapple with beetroot, fresh pineapple with cucumber juice, fresh watermelon juice, fresh mango juice and other more fresh fruit juices. You could go for a more classic breakfast drink like milk of different variants.

Hold up, though. If you think that’s all you get to have for breakfast here at Enye by Chele Gonzales, then you thought all wrong! They didn’t miss out on heavy breakfast options if that’s what you are throwing a tantrum about, because they have a whole menu of heavy brekky options you could check out and ask their staff of.

From that menu, we got their Crimson Egg Florentine which is a plate of poached egg, sautéed spinach, smoked salmon, hollandaise sauce, and lampfish caviar.

Following that with their Foie Gras Scrambled Eggs which is just as easy to love as the first one we had as this one is a serving of seared duck foie gras, red wine beef jus, and puff pastry.

After that, what we had was their Big Man’s Breakfast which really is for a big man or someone who has a big breakfast appetite. This one is loaded with grilled beef, homemade sausage, baked mushrooms, corned beef, beans, fried egg, pork belly, and grilled tomato.

Having some beef got us wanting for more so we went for their Braised Beef Brisket which we absolutely love and we could call a fave, because this one is of Korean style braised beef, crispy bok choy, as well as kimchi.

Getting a taste of international flavors, we kind of missed having a taste of home, and so we did not say no to a few of our local faves like their Arroz Caldo which is a Filipino style congee. This one is really palatable and we just could not get enough of.

Alongside that, we also had their Longsilog which is a classic Filipino breakfast that is a plate of native chorizo, garlic rice, fried egg, as well as pickles.

We could not deny how full we got after having a scrumptious breakfast all prepared by this great restaurant at Crimson Resort & Spa, Mactan. Enye by Chele Gonzales continues to wow us every time we dine with them. Whatever the time is, they really are giving us an unforgettable dining experience.
