Cebu is a wonderland and we definitely are going back to explore it more! But wait up, as we only got back from Cebu recently, we got to stay at Crimson Resort & Spa at the heart of Cebu. At Crimson, we did not only got the chance to check out and enjoy its amenities as we also got to experience their different dining options like Enye by Chele Gonzales.
Enye by Chele Gonzales is a Spanish restaurant focused on the different diversities of food in Spain. The menu is divided into two, Traditional and Chef’s Creations.
Traditional selection is consisted of Spanish and Filipino cuisines which are connected through culture and history. Most of these dishes were made to be shared with family and friends. On their menu, they have chosen traditional classics that connect both cuisines. Meanwhile, Chef’s Creations selection is of the gastronomic revolution in Spain which brought the addition of fun contemporary Spanish food. It paved the way for the chefs to innovate, draw inspiration from global cuisine while integrating Chele’s advocacy on the use of local ingredients.
As this was our first night at Cebu, specifically with Crimson Resort & Spa, we had or dinner here at Enye by Chele Gonzales. We started with their Ensaladilla de Tartar de Atun. This refreshing serving of greens is of salmon roe, potato salad, and tuna.
Following that is a classic Spanish appetizer which is none other than Gambas al Ajillo. If you are not familiar with this, then this one is a hearty plate of sautéed shrimps, olive oil, garlic, and chili. That yummy punch in each succulent bite of shrimp is just hard to forget, we tell you!
For a more familiar taste with a twist, their Cebu Lechon Tacos is a homey dish you would not want to miss. This one is of mango salsa, jalapeno and frijoles, mousse, and sour cream. It’s such a wonderful hand-held treat that is hard to beat.
From a play on a Pinoy classic, jump onto some Spanish nomnoms which is the Croqueta De Mariscos. These cute crunchy balls are of béchamel croquettes, seafood, and fish. This one is such a texture-filled dish that your palate will no doubt love.
And of course, as we are here for dinner, we did not even think twice when the Paella Negra finally arrived on our table. This hearty classic Spanish dish is a must-try here at Enye by Chele Gonzales as this one is of squid ink, scallops, and tender grilled octopus.

For dessert, what we delighted in was their Calamansi Textures. This quirky and fun dish really revolved around the citrus treat that is calamansi as each and every element of this one is of calamansi like its cake, mousse, and biscuits! This one is also topped with ice cream which balances all the citrus surprise in every mouthful.
Well, being this night is our first to spend here at Cebu, we really wanted to have a good night sleep and Enye by Chele Gonzales know how to exactly do that. We had a few of their bestselling drinks such as their Dolce de Noche which is a mix of espresso, vodka, caramel syrup, butterscotch syrup; their Todo de Mi which is a glass of vodka, red wine, pineapple juice, tarragon syrup, and mint; as well as their Sbagliattocorinto which is of gin, sweet vermouth, rosemary syrup, and Orleans bitters.
Our first dish was actually a compliments of Chef Ivan which was their Jamon y Parmesano. This one is a lovely serving of bread with Serrano ham and parmesan mousse; and we really appreciated it as were tired from our flight that was unfortunately delayed for 6 long hours, so Chef Ivan, Grace, and the whole of Enye by Chele Gonzales made our day ten times better than it was.
