Ginisang Munggo with Pork Pata

Ginisang Munggo is one of those FIlipino dishes that will not hurt your budget but could feed your whole family. Basically, this dish is sauteed mung beans with spinach, but there are actually a lot of other versions of this too, depending on the household that is serving it. If you could remember, we have actually shared two Ginisang Munggo versions that our family often goes for. One is our Munggo Overload recipe and the other is our Ginisang Munggo with Bagnet recipe. From that you will already see that we love playing around with the classic Ginisang Munggo recipe by adding scrumptious protein options; and so this time, we have decided to use Pork Pata.

Ginisang Munggo with Pork Pata

Pork Pata is a pork cut that is usually from pig’s hocks to the trotters. This is often used to make the classic Filipino dish, the Crispy Pata, which is traditionally cooked deep-fried, but can also be cooked in the oven. We did not deep-fry the pork pata for this recipe, though, but believe us, by adding Pork Pata to Ginisang Munggo, we definitely have made this veggie dish more sumptuous than it already is.

First we cooked the munggo beans, then we seasoned and tenderized the pork pata. After that, we moved onto the first steps of cooking our Ginisang Munggo with Pork Pata and that is sautein garlic, onion, tomatoes, and munggo beans. Next to that is we mashed and seasoned the munggo beans, added pork pata and water onto it, and then brought it to a boil. We added fish sauce and ampalaya leaves in order for our Ginisang Munggo with Pork Pata to be more flavorful. Once done, we transferred it to a serving bowl and started filling ourselves up with it.

Ingredients for Tenderizing the Pork Pata:
 1 tsp peppercorn
 3 laurel leaves
 1.40 kg pork pata
 1 liter of water
Ingredients for Precooking the Mung Beans:
 2 cups munggo beans
 1 liter of water
Other Ingredients for Cooking Ginisang Munggo with Pork Pata:
 5 tomatoes
 2 onions
 6 garlic cloves
 2 tbsp fish sauce
 ¼ tsp ground black pepper
 1 tbsp sugar
 ½ tbsp salt
 1 bundle of ampalaya leaves

Directions for Precooking the Mung Beans:

Boil munggo beans for 30 to 45 minutes or until beans are tender.

Directions for Tenderizing the Pork Pata:

While munggo beans are being cooked, place pork pata into a pot.

Add laurel leaves, peppercorns, and water.

Let it tenderize for 30 to 45 minutes or until meat is tender.

Directions for Cooking Ginisang Munggo with Pork Pata:

Chop garlic, onions, and tomatoes. Set aside.

Saute garlic, onion, and tomatoes.

Add cooked munggo beans. Slightly mash them.

Add salt and ground black pepper. Saute.

Add pork pata and water. Bring it to a boil.

Add fish sauce. Mix.

Add ampalaya leaves. Let it simmer for a bit.

Transfer Ginisang Munggo with Pork Pata to a serving bowl.
