Ginisang Upo is truly a dish close to our hearts. We have grown up eating this with our family at least once a week because other than it is delicious and filling, Ginisang Upo is economical as well. With upo being its main ingredient, Ginisang Upo can be made heavier by adding protein and other vegetables into the mix such as pork, shrimp, and tomatoes. Undeniably, by adding some meat and seafood onto it, Ginisang Upo becomes more hearty, satisfying, and flavorful too!

Since we have not had Ginisang Upo that much in a while and obviously, we are all for giving our heart’s desire, we decided to cook it for today so we could once again share it with people dear to us. Plus, we are feeling a bit nostalgic lately and we have been missing the days where our parents are the ones cooking for us, making us feel more warm and mushy inside.

Chop garlic, onions, tomatoes, and upo; then slice pork liempo, and then peel and devein the shrimp. Set them aside.
Place shrimp heads in a small bowl, then pour water onto it. Press shrimp heads to extract flavor. Set aside.

Add pork. Saute.
Add water, then cover pan with lid. Let it simmer until pork is cooked and tender.

Add salt and ground black pepper.
Add oyster sauce. Saute.
