Whether it’s a feast or simple celebration, a Filipino gathering will not be complete without Lechon being served. Even on restaurant’s buffet, Lechon is always a main stay. Thus, the abundance of this favorite dish sometimes causes leftovers. But the great thing about these left overs is you get to create another awesome dish from it, called Lechon Paksiw.

Chopped one whole garlic.
Chopped two whole onions.
Slice the Lechon Belly.
Saute' the chopped garlic and onions in a pan.
Then add the sliced Lechon Belly.
Add the soysauce and water and let it simmer for at least 20 minutes.
Add the bay leaves then add the vinegar.
Add the ground pepper then add the salt.
Stir everything for at least a minute.
Add the brown sugar then stir.
Add Mang Tomas Sauce, stir and then let it simmer again.
Turn off the heat and transfer to a serving plate.
Share and enjoy!
