Our sweet tooth is all filled up again, all thanks to the Maja Blanca we made to satisfy our palate’s cravings for a sweet meal ender and snack! Not familiar with Maja Blanca? Well, this Pinoy treat is also called as Coconut Pudding and this is made from coconut milk, sweet corn kernels, and toasted coconut. Unbeknownst to a lot though, the original Maja Blanca doesn’t actually include corn nor milk. However, we prefer the one with corn and milk hence that’s what we did!

Maja Blanca is another popular dessert here in the Philippines. This smooth, milky, creamy, and coconutty goodie surely is a wonderful dessert to have as it has that right dash of sweetness. On top of that, this rich and luscious treat is certainly easy to make as its ingredients are also accessible here in the Philippines. No wonder Filipinos love making and eating this!

Besides from wanting to give into our cravings, we also made Maja Blanca because we missed it. We were not able to have some last Christmas so we decided to make our own today as we cannot wait any longer for a fiesta or a special occasion to happen just to have this since that is when and where Maja Blanca is commonly served. Truly, this treat is a must-have on parties and since we are not going to attend a gathering anytime soon, we decided to just make one ourselves — and it totally paid off!

Preparing and cooking our Maja Blanca was easy to do. We basically just cooked everything in a pan and then presented it nicely in a tray for our loved ones to dig into. Delectable food like Maja Blanca becomes even more enjoyable over chit-chats and laughs after all. With that, thanks to our Maja Blanca, we also got to catch up with a few of our friends and family. They loved our Maja Blanca so much that they all had seconds and even thirds.

Ingredients:
 2 cups coconut milk
 2 cups evaporated milk
 2 cups condensed milk
 2 cups corn kernels
 1.50 cups sugar
 1 l water
 ½ cup peanut
 3 cups cornstarch
 water for cornstarch slurry

Directions:

Pour coconut milk into a pan then add evaporated milk, condensed milk, white sugar, corn kernels, and water. Mix well.

Turn on medium heat and keep on stirring until sugar is dissolved.

In a bowl, make a cornstarch slurry by mixing water and cornstarch. Stir well until cornstarch is dissolved.

Gradually add cornstarch slurry into the pan while stirring. Continuously stir to prevent lumps.

Continue cooking and stirring until mixture thickens.

Transfer mixture into a tray. Smoothen the top.

Add grated cheese on top, and then slice to your preference.

Top each slice with crushed peanuts. Serve and enjoy!
