Munggo Overload Recipe

As much as it is a classic Filipino dish, it is also known as a go-to dish on a Friday. Apparently, most of the Filipinos cook this up on a Friday as a break from all the sinful, meaty, fatty dishes that have been consumed over the course of a week. After all, its main ingredients are beans and malunggay. Enough with the mystery effect, huh? let’s just name this well-loved Pinoy dish we have made for you – Munggo!

Munggo is an ultimate comfort food to Filipinos as it is a hearty, yummy, and budget-friendly dish that surely will bring a sense of warmth and home in every mouthful. Truly, this mung bean stew can be played up with some pork cutlets and even chicharon, but we decided to make it a bit more indulgent by putting not only those! Our Munggo Overload has fish, shrimp, and of course chicharon!

Ingredients:
 ½ kg munggo
 ¼ kg shrimp
 6 pieces tinapa
 ¼ kg pork
 1 tsp ground black pepper
 1 tbsp salt
 2 tbsp sugar
 3 tbsp fish sauce
 1 whole garlic
 2 pieces onion
 5 pieces tomatoes
 2 packs pork cracklings
 3 cups water
 1 tali malunggay
 2 tbsp cooking oil

Directions:
1

Chopped garlic into fine pieces.

Chopped onions into small pieces.

3

Slice tomatoes into medium sizes.

Detach Malunggay leaves and place into a big bowl.

Peel shrimps skin and place into a bowl.

Remove fish bones from the Tinapa leaving only its meat.

Wash munggo beans with water for three times.

Boil Munggo beans for 20 minutes.

Mash all munggo beans.

Saute' garlic, onions and tomatoes.

Add pork strips to the mix, followed by the shrimps and then tinapa.

Add the mashed munggo beans to the pan and then mix.

Add water, mix and then let it boil.

Add ground black pepper and then add salt.

Add fish sauce and then mix.

Add brown sugar, mix and then let it boil again.

Add pork cracklings, malunggay leaves and then mix.

Serve munggo overload in a bowl and enjoy!
