Nilagang Beef Belly Recipe

We can’t believe it took us this long to give you a classic Nilaga recipe. We have given you Nilagang Pata using Instant Pot and even Nilagang Corned Beef, but we haven’t given you Nilagang Baka yet—which we intend to to do now.

Nilaga is a traditional Filipino meat stew or soup made with protein, usually beef or pork, alongside various vegetables such as cabbage, pechay, or even bok choy. Other people even add saba bananas to their Nilaga which believe it or not is amazingly satisfying in all aspects! The balance of sweet and salty tones that a Nilaga has could hook anyone in an instant, we are telling you!

Its tasty clear soup is just perfect with white rice which you all know Filipinos are cray-cray for! Hence, don’t get shocked when you reach for more servings of rice as you sip on a delicious bowl of Nilaga. Of course, the soup is not the only thing wonderful when it comes to having Nilaga, as we have mentioned, it also comes with protein, which for today we have decided to go for beef together with fresh vegetables.

Ingredients for Tenderizing the Beef and Making Beef Stock:
 ½ tsp black pepper
 1 tbsp salt
 1 liter water
 1 kg beef
Ingredients for Cooking the Nilagang Beef Belly:
 1 kg tenderized beef
 2 corn
 3 potatoes
 1 cabbage
 2 white onions
 4 bundles of pechay
 5 saba bananas
 2 scallion stalks
 1 lemongrass
 ¼ Baguio beans
 1 ginger
 2 tbsp fish sauce
 1 tsp salt

Directions for Tenderizing the Beef and Making Beef Stock:

Marinate beef with calamansi juice, soy sauce, and ground black pepper.

Slice beef into cube, and then place them in a big pot.

Add peppercorns, salt, and water. Bring to a boil.

Once boiling, lower heat and cook for 1 to 1.5 hours or until beef is tender.

*Remember to remove scum, and then prepare the other ingredients needed to cook Nilagang Beef Belly.

Directions for Cooking Nilagang Beef Belly:

Slice white onions, ginger, potatoes, scallions, pechay, cabbage, saba bananas, and corn.

Once beef is tender, add ginger and corn. Let it simmer for a while.

Then add lemongrass, white onions, potatoes, and saba bananas. Let it simmer again.

After that, add fish sauce, salt, cabbage, and pechay. Cover with a lid and simmer again.

Then add scallions, and let it simmer for a bit one last time.

Transfer to a serving dish and serve. Enjoy!
