Ingredients:
 2 cups U.S. Green Peas
 2 tbsp parmesan cheese (finely grated)
 1 tbsp butter
 2 garlic cloves (minced)
 1 tbsp olive oil
 10 shrimp (large; peeled and deveined)
 4 thick cut bacon slices
 2 tsp lemon zest
 1 tsp lemon juice
 salt to taste
 ground black pepper to taste
 extra virgin olive oil
 2 tbsp fresh mint leaves (small; roughly chopped; optional)

Directions:
Directions for Making the Green Pea Puree:

Cook green peas in a large pot of boiling water for about 4 minutes or until tender.

Drain green peas and keep at least 1/2 cup of the cooking liquid. Set aside both green peas and the cooking liquid, separately.

Make sure to also keep aside at least two tablespoons of green peas for garnish later.

Place remaining green peas in a food processor together with parmesan cheese, a tablespoon of mint leaves, butter, and garlic.

Start to puree the pea mixture in the food processor. Remember to gradually add pea cooking liquid from time to time so as to achieve a light and creamy texture.

Season mixture with salt and ground black pepper.

Transfer green pea puree in a bowl, cover, and then set aside.

Directions for Cooking the Shrimp and the Bacon:

Wash shrimp with cold water.

Season it with salt, pepper, and lemon juice, then drizzle it with olive oil. Set aside for a bit.

Dice bacon, then cook it in a skillet over medium high heat until golden brown and a touch crispy.

Drain it, then set it aside as well.

Going back to the shrimp, heat olive oil in a skillet over medium high heat.

Cook shrimp until golden brown, about three minutes each side, then set aside again.
