Pinaputok na Tilapia is no new recipe, that’s for sure. In fact, we have grown up to eating this from time to time as tilapia is surely a dependable fish choice. Pinaputok na Tilapia is a recipe in which you will be slicing the tilapia and then stuffing it to the brim with different ingredients such as tomatoes, onions, and ginger. Why is it called Pinaputok na Tilapia when you are going to stuff it? It is because after frying or baking it, the stuffed tilapia will be looking like its stuffing “exploded” or “bursted”, which are two words that mean “pinaputok” in Filipino. With that, regardless if you are going to fry it or bake it, you will end up with something oozing with flavor – or bursting with flavor, we dare say.

Pinaputok na Tilapia Recipe

Ingredients:
 5 Tilapia
 2 stalks of scallions, sliced
 4 tomatoes, sliced thickly
 1 onion, sliced thickly
For Tilapia filling:
 6 tomatoes, medium sliced
 1 onion, minced
 2 stalks of leeks, minced
 5 tsp gingers, minced
 1 tsp ground black pepper
 1 tbsp salt
For Dipping Sauce:
 10 calamansi
 3 green chillies
 5 red chillies
 3 tbsp soy sauce
 ½ tsp ground black pepper

Directions:

Season Tilapia with salt and pepper.

Torch banana leaves to make it pliable. Brush banana leaves with melted butter.

For making the Tilapia filling:

In bowl, combine tomatoes. leeks, onion, ginger, ground black pepper and salt. Mix well.

Stuff Tilapia with the filling or mixture.

Place slices of tomatoes. onion and scallions on both sides of Tilapia. Wrap it with banana leaves.

Tie both sides and in the middle to secure the fish.

Fry both sides for 6-8 minutes. Unwrap Tilapia and serve in a plate.

Dip in the dipping sauce and enjoy!
