It has been a while since we talked about a pasta dish but do not fret, because today is the day we turn things around. You guys know we have an undying love for pasta, after all.
Classic Carbonara is mainly made with seasoned spaghetti with beaten and lots of cheese. That’s honestly just how it is, but then again, we FIlipinos love putting a twist on everything with bias to our food culture and palate. That said, the recipe we have cooked for you today is none other than everyone’s favorite, Pinoy-style Carbonara!

Pinoy-style Carbonara is meant to feed more people as it is loaded with more sauce and meat since Filipino households are usually of big families. Quick and easy to make, Pinoy-style Carbonara is undeniably perfect for family dinners and special occasions as everyone loves a hearty and creamy dish that has tons of crisp bacon and sauteed mushrooms in it.

That said, as we have been giving you more viands recently and were not able to give you a pasta dish, we decided to make our Pinoy-style Carbonara even heavier than it originally is. We did not only make the sauce more hearty by using evaporated milk and all-purpose cream as well as putting bacon and whole mushrooms in it, because we also decided to add a ton of ham into it and then make it even more luscious by throwing in some butter. Indeed, we made our Pinoy-style Carbonara with you in mind because we want to give the tastiest and most scrumptious one we could for now.

Other than making it more filling, we also decided to play with its texture a bit and so, instead of using spaghetti noodles, we used fettuccine instead which we think make each forkful more luscious and saucy since the flatness of fettuccine gets more sauce onto it. Truly, you will be enjoying eating our Pinoy-style Carbonara as you get to satisfy your pasta cravings in every mouthful.

Saute garlic and onion.
Add butter and then let it melt while sauteing.
Add sliced mushrooms. Saute.
Add bacon. Saute.
Add salt. Saute.
Add sliced ham. Saute.
Add evaporated milk. Mix.
Add ground black pepper. Mix.
Add all-purpose cream. Mix.
Let creamy Carbonara sauce simmer for a while.
In a pot of boiling water, cook pasta 1 to 2 minutes less as instructed in the package.
Once cooked, add pasta noodles into the sauce. Toss to combine until pasta noodles are coated with sauce and heated through.
Transfer Pinoy-style Carbonara to a serving dish.
Top with cheese, chopped parsley, and more bacon bits or slices.
Serve and enjoy!
