On top of that, this dish is well-loved by Filipinos as its blend of salty and sweet notes are a wonderful pairing to, you got it, steamed white rice. Indeed, this dish is definitely one you could rely on when you have been craving for a classic, comforting, and filling eat.

As much as we love the straightforward Adobo such as our Pork Adobo and Adobong Pusit recipes, we can’t help but try different versions of this dish from time to time as well, just like our Chicken Adobo recipe which we pan-fried and our Chicken Adobo sa Gata. Seeing how delicious gata is with Adobo, we have then decided to try it one more time on on another protein—pork this time.

Pork Adobo sa Gata is a hit-two-birds-with-one-stone kind of dish as it more than just satisfied our cravings for that sweet and salty mishmash of flavors that only Adobo can deliver, plus that milky and coconutty goodness only a gata can pull off! Truly, a luscious dish that had us drooling even though we are still cooking it. Its aroma was just heavenly and it had us even more excited to eat it!

Slice pork then place it into a large bowl.
Add bay leaves, ground black pepper, brown sugar, vinegar, and soy sauce. Mix well.
Set aside and let it marinate for at least an hour.
