Pork Binagoongan Recipe

Filipinos don’t shy away when it comes to condiments and spices, thus it is not surprising that the Filipino cuisine is known for its strong, bold flavors. You definitely can rely on Filipino cooking if you want a meal that is hearty and flavorful at the same time! On top of that, Filipinos love getting the most out of what they paid for hence their love for Bagoong. Bagoong, also known as shrimp paste, is undeniably a condiment famous in the Philippines for its distinct scent and taste.

As much as there is an outpour of love when it comes to Bagoong, we also cannot deny that there are people who are not fond of this condiment. It is an acquired taste, so to speak. That isn’t the case for us, though, since we are one of those that adore this in our dishes. Don’t believe us? Well, we are actually here to add another Binagoongan recipe to our Chicken Binagoongan and Binagoongang Bagnet Recipes, so take it as you will, but we think we won’t be doing this if we don’t like Bagoong in the first place.

That said, today’s dish is actually one of the common, if not most common, binagoongan dishes there is—the Pork Binagoongan. Binagoongan, in general, is a Filipino dish in which protein is cooked with bagoong which as we have mentioned, is also known as shrimp paste, so today’s recipe is basically pork with shrimp paste. Don’t get us wrong though; of course there are other ingredients that make up a delicious Pork Binagoongan such as vegetables, specifically eggplant. Again, Bagoong has a rich and savory flavor so pairing it with the freshness of eggplant is a great way to balance the flavors.

We promise you, you will be downright enjoying an umami-filled meal time once you finish making one. Pork Binagoongan is also great with steamed white rice so you surely will be ending up with not only a happy and satisfied palate, but also a round and full belly.

Ingredients:
 1 kg pork
 3 tbsp shrimp paste
 4 eggplants
 5 green chilis
 5 red chilis
 2 tomatoes
 1 garlic clove
 ½ tbsp salt
 ¼ tsp pepper
 1 tsp sugar
 1 onion
 ¼ cup vinegar

Directions:

Slice garlic, onion, tomatoes, red chilis, green chilis, and eggplant. Set aside.

Fry both sides of the eggplant slices. Set aside.

Cook pork until slightly brown. Set aside.

Saute garlic, onion, and tomatoes.

Add shrimp paste. Stir for a bit.

Add pork. Mix.

Add ground black pepper and salt. Mix again.

Add vinegar. Let the vinegar sit in the mix for 4 to 5 minutes. Do not stir.

Add water. Let it simmer for a while.

After a while, stir.

Once pork is tender, add sugar, then mix.

Add red chilis. Mix.

Add green chilis. Mix.

Transfer Pork Binagoongan into a bowl or a serving dish.
