Pork Menudo Recipe

What we have for you today is probably something you are very much familiar with and that is none other than Menudo. This dish is a traditional Filipino stew made with pork and liver with carrots, potatoes, and bell peppers all in tomato sauce. As much as Menudo is a classic Filipino dish, Mexico also has their version of this, although it is unclear which part of Mexico exactly did it come from; but the northern area claims it started with their farmers making it from leftover parts or their cows.

Do what you may with that information; we just think it is just nice that every country possibly has a take on something that is considered a classic or traditional in your own. With that, today, we are focusing on the Filipino Pork Menudo – a dish that would certainly hit home for you. This dish is not even only available at home, but often times, it is also available in eateries and is also commonly served during event buffets and potlucks with friends and family.

Menudo is a complete dish already. You have your vegetables such as carrots, potatoes, bell peppers and then you also have your protein which is pork and liver. You can also opt to add some hotdogs and raisins into that already loaded mix for extra bite and flavor. Ingredients:
 1 kg pork
 ¼ chicken liver
 85 g liver spread
 ½ tbsp salt
 ½ tsp black pepper
 200 g tomato sauce
 1 tbsp soysauce
 2 tbsp brown sugar
 3 tbsp oyster sauce
 5 hotdogs, sliced
 1 carrot, sliced
 2 potatoes, sliced
 1 green bell pepper, sliced
 1 red bell pepper
 1 onion, chopped
 4 cloves of garlic, chopped
 3 calamansi
 cooking oil
 2 cups water
 3 tbsp raisins (optional)

Directions:

Saute' garlic and onion on a medium heat pan. Then, add pork and let it simmer for 5 minutes. Mix thoroughly.

Add marinated chicken liver into the mix. Then, add tomato sauce followed by salt, black pepper and water. Then, bring it to a boil.

Add oyster sauce, liver spread, potatoes, carrots, raisins and brown sugar. Mix everything thoroughly again.

Add hotdogs into the mix and let it simmer for a few minutes.

Add green bell pepper, followed by the red bell pepper and then mix. Serve hot in a bowl and enjoy!
