Tinapa is actually popular in Filipino households. This is fish cooked or preserved through the process of smoking, hence it is also sometimes called as smoked fish. Its smokey tones are a nice touch to its saltiness and we enjoy balancing those out in a heavy serving of rice, specifically fried rice.

Now, let’s talk about rice. It is no secret that Filipinos just love pairing rice with almost every viand they could think of. “Why?”, you ask. Well, rice has always been a staple food in Filipino households and that is because it is filling. It can stave off hunger and give energy for a whole day’s work. Truly, it is a way of life for Filipinos hence their want and need to have rice every meal time. Although that is the case, there are still instances that all the rice that was cooked served won’t be eaten and that is fine because that just means fried rice for the next meal! Yay!

Fried rice is commonly made for breakfast because of the leftover rice from last night’s dinner – and that is actually the reason why we have made Tinapa Fried Rice for you guys! We got tinapa, we got left over rice, we put it together, and ta-da(!), we got tinapa fried rice!

Tinapa Fried Rice is a scrumptious take on everyday fried rice as it also just makes our morning even more flavorful. With smoked fish also known as tinapa, garlic, onions, rice, soy sauce, ground black pepper, salt, tomatoes, eggs, and green onion, we already got ourselves a drool-worthy and satisfying breakfast that is not only quick to make, but easy to cook too! Certainly a dish that would have you and your family waking up early and happy!

Ingredients
 6-8 medium-sized Tinapa (smoked fish)
 5 cups one day old rice
 4 eggs
 9 cloves of garlic, minced
 1 onion, minced
 3 tomatoes, sliced in small sizes
 4 stalks of green onion, sliced (optional)
 ½ tsp salt
 ½ tsp ground black pepper
 2 tbsp soy sauce

Directions:

Fry the Tinapa (smoked fish) in medium heat.

Tear off the heads, remove the bones and flake the flesh from the skin.

Fry eggs in a pan. Remove it from the pan while it's moist. Set aside.

Saute' garlic and onion. Then, add rice and mix well.

Add soysauce, ground black pepper, salt, tomatoes, cooked eggs and tinapa flakes.

Sprinkle some green onions (optional). Mix well. Serve hot in a plate and enjoy!
