Tsuta: World’s First Michelin-Starred Ramen

We Filipinos have an extraordinary love for ramen. One proof would be the tremendous number of ramen places in the Metro. Of course, all of us have our own favorites. There were a few that opened last year, and one of the newest ramen places to land in Manila is Tsuta.

Tsuta just opened in BGC two months ago. It is receiving mixed reviews from ramen aficionados. Of course, we also had something to say. Curious? Continue reading below.


Let’s start first by saying that Tsuta is the first ramen place in the world to ever receive the prestigious Michelin Star. It started as a small shop in Tokyo, then expanded in some places in Asia due to its distinct taste and good quality. Chef Onishi Yuki adds truffle oil to Tsuta’s ramen making every bowl unique from all other ramen bowls in the country.


We actually attended Tsuta’s grand opening last December 2017. The place was packed with other media personalities and online influencers. Eric Dee of FooDee Global Concepts was there to welcome all the guests and explained a few details about the brand.



During this event, we tried their signature Ajitama Shoyu Soba. According to the staff who assisted us, this is their best-seller and is recommended by many. First let’s talk about its base. Shoyu broth has a soy sauce base. Tsuta’s version of this ramen has a slice of Char Siu, flavored egg, bamboo shoot, leeks, and truffle oil. It’s light, clear, and brown in color. Taste-wise, it’s not as rich as the ramen other famous brands offer. The truffle taste is very evident. We actually liked it but a spicy version would be great.



We actually wanted to try the other two variants but we became so full with just one bowl. Few weeks after, we went back to try their Miso Ramen. This time we got their Char Siu Ajitama Miso Soba and it was divine. It’s with 4 slices of char siu, flavored egg, red onion, corn, beansprout, hot sauce, porcini mushroom, and watercress. Compared to the Shoyu variant, Miso is so much richer in terms of flavor. It’s light spicy, but bold in texture. The noodles were perfectly cooked. The egg was runny and packed with flavors. We definitely enjoyed our bowl.



We also tried their Ro-su Char Siu as side dish. It’s roasted char siu with butter sauce and garnished with leek and watercress. For only 100php, we honestly think it’s worth every penny. It’s so soft and has melt-in-your-mouth texture. Definitely one of our favorites!


Overall, we are satisfied with our Tsuta visits. One must just note that Tsuta serves different broth from the broth we are used to in the other ramen shops in the country. Most of the rich and bold ramen we know are tonkotsu-based. This broth is naturally thick as it is a product of boiling pork bones for several hours.

Tsuta is a unique ramen place on its own and worthy of that Michelin Star.
