In fact, we are almost at the end of it as we are about to start another year again – hopefully filled with wins and lessons. With that, we have prepared something that will be getting you into the Holiday cheer, something that would slap you with deliciousness and get you grooving with some of that fun and exciting Holiday spirit!

Wondering what it is? Here are two clues for you: Sweet and purple. There you go. We think you already have an idea already as to what we have prepared for you and your loved ones today. You still don’t know what it is? Okay, fine, we will tell you all about it now. No need for you to act like The Grinch, all right?

What we have for you today is none other Ube Biko, a glutinous and sumptuous Filipino kakanin made out of sticky rice and ube halaya. Honestly, this one is like a mishmash of the classic Filipino Biko plus Ube Halaya which are two sepearate sweet things that we love to have too. Since we love those two separately, we decided to have them both together hence our take on Ube Biko!

We are going to be honest with you right here right now, got that/ You are going to love every bit of this Filipino dessert, especially when you are all hands down for a creamy and chewy rice cake with that unique yet luscious purple yam flavor that is just so hard to resist. But then again, why would you even resist it? Seriously, you are going to regret even just thinking about resisting this yummy treat because it is such a lovely ender after having a feast of savory dishes that you have on your table this Media Noche or Noche Buena.

Ingredients:
 3 cups glutinous rice
 2 cups ube halaya
 1 1/2 cup of sugar
 5 cups coconut milk
 cheese (optional)
 2 tbsp ube extract

Directions:

Wash glutinous rice a couple of times.

In a rice cooker, cook glutinous rice with coconut milk instead of water. Use 3 cups of coconut milk.

In a pan, add 2 cups of coconut milk. Add brown sugar and stir well.

Add ube halaya and mix well. Then, add ube extract and stir well.

Add cooked glutinous rice and stir well until well-blended. Let it cook until the mixture is sticky.

Serve hot in a large plate and add grated cheese for toppings (optional). You may also use latik. Enjoy!
