Time and time again, you will see us whipping up some ube-licious treats in our kitchen — and today is one of those times! Growing up in the Philippines, ube is one of our family’s well-loved goodies. When we see our elders holding some ube in their hands, we just know we are up for something delectable that day; so try not to get surprised (or maybe even overwhelmed) with how much we love ube!

Seriously, though, our love for ube is not something to be taken lightly. If you haven’t noticed, we actually have a number recipes on some ube delicacies already such us Ube Jelly Salad, Ube Biko, and Ube Champorado. These three are just a few of what we have shared with you so you better look out for more because we surely have more ube yummies up our sleeves, and as we have said, we are here to share another with you today!

Last month, we told you guys all about our Maja Blanca Recipe and there is no need for you to tell us, because we already know you guys loved it as much as we did. With our love for both ube and maja blanca, we thought of making the best of both, hence our Ube Maja Blanca which we are to share with you now.

Ube Maja Blanca is an ube-rrific twist on the classic coconut pudding that is the Maja Blanca. Made mainly with coconut milk, cornstarch, corn kernels, and of course, ube, this decadent Filipino delicacy boasts a creamy and velvety texture plus a milky and sweet taste. Truly, Ube Maja Blanca is great as a dessert and as a snack any day of the week, but most specially during celebrations and the Holidays.

Much like our classic Maja Blanca recipe, this Ube Maja Blanca recipe we prepared for you is a breeze to make! Believe us, you need not to worry if you are still a beginner trying your hand at making something special for your loved ones because your efforts will turn out a sweet success, so to say!
Preheat the pan.
Pour coconut milk onto the pan.
While bringing the coconut milk to a boil, stir.
Continuously stir the coconut milk until most of the liquid evaporates and the coconut milk turns into a brownish residue (this is the latik).
Transfer latik into a container. Set aside for later.
In a new pan, pour coconut milk, then evaporated milk.
Add sweet corn kernels, white sugar, ube flavored condensed milk, and vanilla extract. Mix.
This is optional, but add ube extract, if preferred. Mix.
Add water, then stir and adjust heat to medium.
Cover with a lid and let it simmer for a while.
Gradually add cornstarch slurry. Remember to continuously stir to prevent lumps.
Continue to cook until mixture thickens.
Transfer mixture into a pan. Smoothen the top.
Set aside and let it cool for a while.
Once it is set, slice Ube Maja Blanca to a preferred serving size. Don't forget to top each slice with latik.
