Chicken Afritada Recipe

There are a lot of Filipino dishes that have tomato-based sauces such as Mechado, Menudo, and Afritada. Believe it or not, these three dishes sometimes cause confusion to people eating it all because they all look similar. However, what differentiates them from one another is actually the protein plus the other ingredients used in it.

Chicken Afritada

Going back to what we actually have for you today, Afritada is a popular dish here in the Philippines. It normally uses chicken as its main ingredient, but other versions of it are also made with beef, pork, and even seafood. For our Afritada, we decided to go for the classic which is Chicken Afritada, and with that, we stewed the chicken in tomato sauce alongside carrots, potatoes, as well as bell peppers.

Chicken Afritada, believe it or not, is a dish perfect for any occasion, but then again, since it is easy to prepare, many Filipino households actually serve it as an everyday meal. Plus, with its sauce being rich and flavorful, Filipinos love pairing this dish with steamed white rice, of course.

Other than Chicken Afritada is hearty, flavorful, and economical, it also embodies the Filipino saying, “sabaw/sarsa pa lang, ulam na” which translates to ” its soup/sauce itself can already stand as a viand on its own”, so this dish can no doubt satisfy a number of hungry tummies already! Isn’t that awesome?

That said, don’t worry if you have a huge family with huge appetites too, because Chicken Afritada has got you covered, and you might even have some leftover which your loved ones will be looking forward to and you can reheat and enjoy as well. Yay!

Ingredients:
 1 kg chicken
 2 potatoes, medium sliced
 1 carrot, sliced
 1 onion, chopped
 2 red bell peppers, sliced
 5 garlic cloves, chopped
 2 tbsp brown sugar
 1 ¼ tsp ground black pepper
 1 tsp salt
 1 tbsp fish sauce
 150 g green peas
 2 tbsp tomato paste
 250 g tomato sauce
 1 cup water

Directions:

Slice garlic, onion, red bell peppers, potatoes, and carrot. Set them aside.

Sear carrots. Set aside.

Sear potatoes. Set aside.

Sear bell peppers. Set aside.

Saute garlic and onion.

Add chicken. Saute.

Add fish sauce. Let it simmer for a bit.

Add tomato paste. Distribute evenly.

Add tomato sauce. Distribute evenly.

Add ground black pepper. Mix.

Add water. Mix.

Add salt. Mix.

Bring to a boil, then let chicken simmer for 20 to 30 minutes or until chicken is cooked.

Add potatoes and carrot.

Cover it with a lid and let it simmer for a while.

Add green peas.

Add brown sugar (optional). Mix.

Add bell peppers. Mix.

Transfer to a serving dish or a bowl. Serve and enjoy!
